In Oliver Stone's JFK (the directors cut) there is a scene where
Jack Ruby is receiving injections, Stone was insinuating that he
received injections with a cancer and Jack Ruby died of a tumor
in prison, they said natural cause of course.

How much credibility is there to this scene?

I've believed that ever since I was a kid, before I even knew that he claimed it. I read in a detective magazine, back in the 60's, that a woman fed her family small doses of arsenic each day. They died off, one by one, and autopsies showed falsely that each of them died of cancer. The first thought that popped to my mind was that Jack Ruby died in prison supposedly of cancer, and we, the public, never got to hear his side of the story.
